I had some “extra” time this morning and decided, after some inspiration, that it would be good to start the day with a nice foundation – setting my intentions for the day and made breakfast.
My intention is to be kind to my body today by tracking everything, taking an extra midday vitamin packet and go to the gym after work. I deserve to take the time for myself.
The base of my fresh Italian scramble, tomatoes, red onion and garlic:
Four egg whites and one whole egg:
One tablespoon of olive oil was a bit too much:
Add the eggs, some oregano, salt and pepper and mix it up!
Along with Ezekiel sprouted grain bread and a 1/2 tbs of butter each – delicious and just enough for two:

The really cool thing about making a scramble like this is that you can throw whatever veggies you have in the fridge into the pan with a little bit of seasoning: spinach, broccoli, red bell pepper and asparagus are favorites in our house. You can also add left over tofu for a superprotein breakfast. Feta cheese also makes a regular appearance in our breakfast scrambles, but I omitted it today due to cake-detox.
