Fritatta for two.

Inspired by a visit with new friends this weekend*

2 whole eggs
3 egg whites
1 tbsp extra virgin olive oil
1 medium tomato, chopped
1/4 cup red onion, chopped
2 cloves garlic, minced
Fresh basil to taste

Sautee the good stuff, and pour in the beaten egg mixture, sprinkle the basil on top. This is how I scramble, but instead of scrambling, throw the whole OVENSAFE pan in a hot oven for a few minutes.

Exactly how long, and what temp? Sorry but I was distracted.. Probably 375 for like 5 minutes. You can tell when it’s done – it’s puffy and golden.
